The Antica Distilleria Domenico Sibona is located in the Roero area in the municipality of Piobesì d'Alba, a few kilometers from Alba. The special thing about Grappa Sibona is that it has a special distilling license, the No 1 of the UTF. Pomace from freshly harvested grapes (mainly from the Moscato and Brachetto grape varieties), selected by Sibona during the harvest, is used. Distillation is carried out entirely in-house in copper stills and ageing takes place for a long period in stainless steel vats. The grappa is matured for an initial 2 years in medium-sized classic oak barrels and for a further 2 years in sauterness barrels. The storage in Sauterness barrels was tested by Sibona as an innovation and leads to high-quality results. Tasting notes:Colour: amber. Nose: notes of ripe fruit, honey, acacia flowers. Taste: Full-bodied, fresh, elegant, notes of candied fruit, oak. Finish: Long lasting. Drinking suggestions: At 18 °C in a classic tulip or balloon glass with or without stem. A perfect accompaniment to dried fruit, walnuts, almonds, desserts, chocolate, mature cheeses or with a cigar.
